			<content:encoded><![CDATA[<p>I have found a Spaghetti Recipe I really enjoy that is with Chicken and Whole Grain Pasta.  This Pasta has some really great benefits being it is made with natural whole grains.  We get Fiber and complex carbs from this that our bodies need..  I have to eat carbs.  I try to stay at a middle of the road glycemic index during the day, I will discuss the benefits of that on another post.</p>
<p>Tonight I have my son and his girlfriend home, my husband, my daughter and her boyfriend, my other son and his two buddies..  So tonights menu is..</p>

<p align="left">Because I buy my chicken breast by the bulk and freeze them I take them out of the freezer and thaw.  Tonight I am using 2 pounds of chicken..</p>
<p align="left"><strong>Ingredients<br />
</strong></p>
<p align="left">2 Pounds chicken breast</p>
<p align="left">One Onion</p>
<p align="left">One Yellow Zucchini Cut up</p>
<p align="left">1 Cup frozen soybeans out of the shell</p>
<p align="left">4 Cloves Garlic</p>
<p align="left">One Small Red Onion</p>
<p align="left">2 Jars Spag Sauce, your choice</p>
<p align="left">2 pkg 7 Grain Spaghetti</p>
<p align="left">Grated Romano Cheese</p>
<p align="left"><em><strong>How To</strong></em></p>
<p align="left">Grill, Saute or thaw your chicken and cut into bite size pieces.</p>
<p align="left">Saute Onion and Zucchini until tender.</p>
<p align="left">Add chicken, garlic, soybeans and sauce; simmer for about 10 min.</p>
<p align="left">While everything is cooking get the pasta cooking according to your directions.</p>
<p align="left">Spoon your sauce mixture over your pasta and add grated Romano.</p>
<p align="left">I also add some sort of French bread to the dinner either toasted or fresh with a dipping oil.</p>

			<content:encoded><![CDATA[<p>Well I have been pulled away once more.  The official move is over and I now have two college boys moved back home.  Brandon 22 and Justin 20.  My daughter Aerial already moved downstairs into Justin&#8217;s old room so now he is upstairs in my old office <img src="http://lovecooking.today.com/wp-includes/js/tinymce/plugins/emotions/images/smiley-cry.gif" alt="Cry" border="0" />  I am now in my bedroom and I am cramped.</p>
<p>Cooking and gardening are my favorite things to do and with the boys gone I have had fun cooking for just my husband and daughter.  Quite frankly it is just us because Aerial lives on salads and chicken nuggets.  So I am back to watching for deals on Pace Hot Salsa.  Why do they not sell it in a larger container so I can save some money?</p>

<p>Baked Whitefish with Florentine Sauce<br />
Corn on The Cob<a href="http://lovecooking.today.com/files/2008/05/fish.jpg" title="fish.jpg"><img src="http://lovecooking.today.com/files/2008/05/fish.thumbnail.jpg" alt="fish.jpg" align="right" /></a><br />
Caesar Salad</p>
<p><strong> Ingredient&#8217;s</strong><br />
2 lbs Whiting Fillets (Truly any whitefish will work)<br />
3 Tablespoons Butter<br />
3 Tablespoons Flour<br />
1 Cup Milk<br />
1/2 Cup cream<br />
Dash of nutmeg<br />
1/2 pound of Fresh Spinach 1/2 cup Parm cheese</p>
<p>2 Lemons<br />
Corn on The Cob<br />
Romain Lettuce or Pre-Packaged Ceasar</p>
<p><em><strong>For the Fish</strong></em>, Pre- Heat the oven to 350 degrees<br />
Bake in a baking dish for about 10 minutes or until flaky with a fork.<br />
Drizzle some lemon and melted butter on top</p>
<p><em><strong>For the Sauce..</strong></em><br />
Melt your butter then add the flour and stir with a wire wisk.<br />
In another pan I heat the milk and cream to a rapid boil then add it to the butter mixture.  Stir this until it is smooth.<br />
Add the nutmeg.<br />
Take the spinach and 1/2 a cup of your sauce you just prepared and mix this together then place Spinach on a platter.<br />
Place Fish on top<br />
Stir the cheese into the remaining sauce and spoon over the fillets.<br />
Sprinkle with a little sauce and a dash of melted butter<br />
Put back in the oven and cook for about 10 minutes or until it is heated through.</p>
<p>Tonight we are just going to make the corn on the cob on the stove by boiling 4 pieces of corn for 7-9 minutes.</p>
<p>The Caesar Salad is prepared with a traditional Caesar Salad Bottled Mixture for ease or if you prefer from a package.</p>
<p>My garden is not yet in full bloom so this is all from the store.</p>
<p>This dish is really good and you can incorporate this to fit your low fat cooking program. My husband is once again off his diet so I am really all over the board.  The boys will not be around for dinner so this is really for my husband and I.</p>
<p>Well the sun has finally popped out so I am heading out into the garden.<br />

<p>Well it ended up being a chilly day yesterday so I decided to make one of my specialties. This is not a lean meal.  My husband has fallen off the diet Plato so my meals go up and down.  My family ate these so fast I did not get any pictures!!</p>
<p><font color="#ff0000">Menu</font></p>
<p><em><font color="#3366ff">Spicy Meatballs-Feeds 4 hungry adults</font></em></p>
<p><font color="#ff0000">3 lbs hamburger, leaner the better</font></p>
<p><font color="#ff0000">2 Eggs beaten</font></p>
<p><font color="#ff0000">1 cup white or brown rice</font></p>
<p><font color="#ff0000">2 jalapeño chopped</font></p>
<p><font color="#ff0000">½ cup crushed red pepper</font></p>
<p><font color="#ff0000">5 Tablespoons Worchester sauce</font></p>
<p><font color="#ff0000">5 Tablespoons Ketchup</font></p>
<p><font color="#ff0000">1 pound bacon</font></p>
<p><em><font color="#3366ff">Garlic and Rosemary Mashed Potatoes</font></em></p>
<p><font color="#ff0000">3 packages instant mashed potatoes</font></p>
<p><font color="#ff0000">3 Tablespoons Garlic</font></p>
<p><font color="#ff0000">2 tablespoons Rosemary</font></p>
<p><font color="#ff0000">Butter and Milk according to the packaged instant potatoes</font></p>
<p>(If you want to add gravy, add gravy!)</p>
<p><em><font color="#3366ff">Coleslaw</font></em></p>
<p><font color="#ff0000">1 Bag of Coleslaw</font></p>
<p><font color="#ff0000">1 Kraft Coleslaw Dressing</font></p>
<p>Mix all the spicy meatball ingredients together except the bacon and then form into baseball size meatballs.  Mine are in between a baseball and softball.</p>
<p>Wrap two pieces of bacon around each meatball crisscrossing each piece.  If your meatballs are smaller use one piece bacon cut in half.  Put on a drip pan at 350 degrees for at least one hour and fifteen minutes.</p>
<p>Garlic Rosemary Mash Potatoes.</p>
<p>Make the mashed potatoes according to your directions then add the garlic and crushed or chopped rosemary right at the end of mixing.</p>
<p>Coleslaw</p>
<p>Follow package directions.</p>
<p>This meal is a hit at my house..</p>

			<content:encoded><![CDATA[<p>What a great but chilly day in Minnesota yesterday. My back is aching this am that is for sure!  My husband and I worked in the yard from 9:00am until 8:00pm..  We took a break with my kids to Grill up a feast!  The goal was a quick and easy menu..</p>
<p><font color="#ff0000">Two Packages Brats</font></p>
<p><font color="#ff0000">Grilled Corn on the cob</font></p>
<p><font color="#ff0000">Jalepeno Butter</font></p>
<p><font color="#ff0000">Pasta salad</font></p>
<p><font color="#ff0000">Hot cucumbers</font></p>
<p><font color="#ff0000">Grilled potatoes</font></p>
<p>The <font color="#0000ff">Brats</font> are pretty easy, grill these according to your instructions on pack, I just make sure they are cooked a bit slow and not pink in center.</p>
<p><a href="http://lovecooking.today.com/files/2008/05/corn_sweet.jpg" title="corn_sweet.jpg"><img src="http://lovecooking.today.com/files/2008/05/corn_sweet.thumbnail.jpg" alt="corn_sweet.jpg" /></a></p>
<p><font color="#0000ff">Corn on the cob</font>, pull back the husks and remove the silk.  Soak in water for about 20 min, air dry.  Add the Jalapeno butter to the corn, pull the husks back up.  Grill on top rack or away from direct heat.  These are going to basically steam in the husk.  We do turn the corn about four times for about 20 min.<a href="http://lovecooking.today.com/files/2008/05/corn-cob.jpg" title="corn-cob.jpg"><img src="http://lovecooking.today.com/files/2008/05/corn-cob.thumbnail.jpg" alt="corn-cob.jpg" /></a></p>
<p><font color="#0000ff">Pasta Salad,</font> this was right out of the box.Made in the AM.</p>
<p><font color="#0000ff">Hot Cucumbers</font> we make a day or two in advance; peel two cucumbers, cut very thin slices, put in a Quart Jar.  Add Vinegar almost to the top then a little water.  Cut up 5-6 Jalapeños , add as much red pepper flakes as you think you can tolerate and then add two heaping tablespoons of crush black peppercorns.  Let sit at room temp for a day.  These are really super hot!</p>
<p>For the <font color="#0000ff">potatoes</font> we wash then cut up into cubes.  I put about two cups per tinfoil packet or double your tinfoil and lay out enough so you will be able to securely close the potatoes.</p>
<p>My batch is tossed in Olive Oil, Rosemary, Crushed Black Pepper and Blue Cheese.</p>
<p>Husbands Batch; Olive Oil, Grated Cheddar, Horseradish, Mustard and Crushed Black Pepper.</p>
<p>Kids.  Pizza Seasoning tossed in the Olive oil.</p>
<p>Cooking time about 20 minutes.  Place packets direct on the heat.</p>
<p>Well there you have it.  We all sat out on the deck ate with the cold wind whipping through us.  Wrapped up some left overs and my hubby and I were back in the garden.  Hope you had a great Mothers Day all!</p>

What I do for my family is buy my chicken during our &#8220;Dollar Days&#8221;.  I get nice size breasts on the bone.  This is for $1.00 a pound.  I stock up!  They come in 3-4 pound packages.  I either freeze all together or I may boil them, pull off the bone and then freeze.
