Spaghetti with Chicken and Vegys
I have found a Spaghetti Recipe I really enjoy that is with Chicken and Whole Grain Pasta. This Pasta has some really great benefits being it is made with natural whole grains. We get Fiber and complex carbs from this that our bodies need.. I have to eat carbs. I try to stay at a middle of the road glycemic index during the day, I will discuss the benefits of that on another post.
Tonight I have my son and his girlfriend home, my husband, my daughter and her boyfriend, my other son and his two buddies.. So tonights menu is..
Spaghetti With Chicken and Vegys
Because I buy my chicken breast by the bulk and freeze them I take them out of the freezer and thaw. Tonight I am using 2 pounds of chicken..
Ingredients
2 Pounds chicken breast
One Onion
One Yellow Zucchini Cut up
1 Cup frozen soybeans out of the shell
4 Cloves Garlic
One Small Red Onion
2 Jars Spag Sauce, your choice
2 pkg 7 Grain Spaghetti
Grated Romano Cheese
How To
Grill, Saute or thaw your chicken and cut into bite size pieces.
Saute Onion and Zucchini until tender.
Add chicken, garlic, soybeans and sauce; simmer for about 10 min.
While everything is cooking get the pasta cooking according to your directions.
Spoon your sauce mixture over your pasta and add grated Romano.
I also add some sort of French bread to the dinner either toasted or fresh with a dipping oil.

The start of summer
Well I have been pulled away once more. The official move is over and I now have two college boys moved back home. Brandon 22 and Justin 20. My daughter Aerial already moved downstairs into Justin’s old room so now he is upstairs in my old office
I am now in my bedroom and I am cramped.
Cooking and gardening are my favorite things to do and with the boys gone I have had fun cooking for just my husband and daughter. Quite frankly it is just us because Aerial lives on salads and chicken nuggets. So I am back to watching for deals on Pace Hot Salsa. Why do they not sell it in a larger container so I can save some money?
Todays Menu
Baked Whitefish with Florentine Sauce
Corn on The Cob![]()
Caesar Salad
Ingredient’s
2 lbs Whiting Fillets (Truly any whitefish will work)
3 Tablespoons Butter
3 Tablespoons Flour
1 Cup Milk
1/2 Cup cream
Dash of nutmeg
1/2 pound of Fresh Spinach 1/2 cup Parm cheese
2 Lemons
Corn on The Cob
Romain Lettuce or Pre-Packaged Ceasar
For the Fish, Pre- Heat the oven to 350 degrees
Bake in a baking dish for about 10 minutes or until flaky with a fork.
Drizzle some lemon and melted butter on top
For the Sauce..
Melt your butter then add the flour and stir with a wire wisk.
In another pan I heat the milk and cream to a rapid boil then add it to the butter mixture. Stir this until it is smooth.
Add the nutmeg.
Take the spinach and 1/2 a cup of your sauce you just prepared and mix this together then place Spinach on a platter.
Place Fish on top
Stir the cheese into the remaining sauce and spoon over the fillets.
Sprinkle with a little sauce and a dash of melted butter
Put back in the oven and cook for about 10 minutes or until it is heated through.
Tonight we are just going to make the corn on the cob on the stove by boiling 4 pieces of corn for 7-9 minutes.
The Caesar Salad is prepared with a traditional Caesar Salad Bottled Mixture for ease or if you prefer from a package.
My garden is not yet in full bloom so this is all from the store.
This dish is really good and you can incorporate this to fit your low fat cooking program. My husband is once again off his diet so I am really all over the board. The boys will not be around for dinner so this is really for my husband and I.
Well the sun has finally popped out so I am heading out into the garden.

Spicy Meatballs and Mashed Potaotes

My Voice Instructions
Well it ended up being a chilly day yesterday so I decided to make one of my specialties. This is not a lean meal. My husband has fallen off the diet Plato so my meals go up and down. My family ate these so fast I did not get any pictures!!
Menu
Spicy Meatballs-Feeds 4 hungry adults
3 lbs hamburger, leaner the better
2 Eggs beaten
1 cup white or brown rice
2 jalapeño chopped
½ cup crushed red pepper
5 Tablespoons Worchester sauce
5 Tablespoons Ketchup
1 pound bacon
Garlic and Rosemary Mashed Potatoes
3 packages instant mashed potatoes
3 Tablespoons Garlic
2 tablespoons Rosemary
Butter and Milk according to the packaged instant potatoes
(If you want to add gravy, add gravy!)
Coleslaw
1 Bag of Coleslaw
1 Kraft Coleslaw Dressing
Mix all the spicy meatball ingredients together except the bacon and then form into baseball size meatballs. Mine are in between a baseball and softball.
Wrap two pieces of bacon around each meatball crisscrossing each piece. If your meatballs are smaller use one piece bacon cut in half. Put on a drip pan at 350 degrees for at least one hour and fifteen minutes.
Garlic Rosemary Mash Potatoes.
Make the mashed potatoes according to your directions then add the garlic and crushed or chopped rosemary right at the end of mixing.
Coleslaw
Follow package directions.
This meal is a hit at my house..

What a great but chilly day in Minnesota yesterday. My back is aching this am that is for sure! My husband and I worked in the yard from 9:00am until 8:00pm.. We took a break with my kids to Grill up a feast! The goal was a quick and easy menu..
Two Packages Brats
Grilled Corn on the cob
Jalepeno Butter
Pasta salad
Hot cucumbers
Grilled potatoes
The Brats are pretty easy, grill these according to your instructions on pack, I just make sure they are cooked a bit slow and not pink in center.
Corn on the cob, pull back the husks and remove the silk. Soak in water for about 20 min, air dry. Add the Jalapeno butter to the corn, pull the husks back up. Grill on top rack or away from direct heat. These are going to basically steam in the husk. We do turn the corn about four times for about 20 min.![]()
Pasta Salad, this was right out of the box.Made in the AM.
Hot Cucumbers we make a day or two in advance; peel two cucumbers, cut very thin slices, put in a Quart Jar. Add Vinegar almost to the top then a little water. Cut up 5-6 Jalapeños , add as much red pepper flakes as you think you can tolerate and then add two heaping tablespoons of crush black peppercorns. Let sit at room temp for a day. These are really super hot!
For the potatoes we wash then cut up into cubes. I put about two cups per tinfoil packet or double your tinfoil and lay out enough so you will be able to securely close the potatoes.
My batch is tossed in Olive Oil, Rosemary, Crushed Black Pepper and Blue Cheese.
Husbands Batch; Olive Oil, Grated Cheddar, Horseradish, Mustard and Crushed Black Pepper.
Kids. Pizza Seasoning tossed in the Olive oil.
Cooking time about 20 minutes. Place packets direct on the heat.
Well there you have it. We all sat out on the deck ate with the cold wind whipping through us. Wrapped up some left overs and my hubby and I were back in the garden. Hope you had a great Mothers Day all!

Well I have been pulled away in many directions this week but food is always on the table here! Tonight we are grilling Chicken Breasts. What I do for my family is buy my chicken during our “Dollar Days”. I get nice size breasts on the bone. This is for $1.00 a pound. I stock up! They come in 3-4 pound packages. I either freeze all together or I may boil them, pull off the bone and then freeze. It is a snap to pull out cooked Chicken breast and prepare taco’s etc. Continue reading »

We had such a fun night last night I got side tracked. We had our “Dump Dinner” last night. This entails, Kielbasa, Corn On The Cob, Shrimp, Potatoes and French Bread.
Grocery Shopping this week I bought up large loafs for $1.00. When I look at what I am cooking during the week I want to use up my perishable items first. I keep the loafs of French Bread out so I remember to use them or they are put into the freezer.
So what is a Dump Dinner? We take Kielbasa, potatoes, shrimp, and corn on the cob, dump it into boiling water, when it is done we drain it.. “Dump” it onto the middle of the table which is lined with brown paper bags……… Continue reading »
